**Cocktails: **
- Margarita — here tequila is carried forward by orange liqueur, lemon, sugar and salt
- Gimlet — our zero waste version of a classic gimlet with gin, upcycled citrus fruits and a flick of absinthe
- Nordic fizz — a fusion of Nordic flavours from Bornholm schnapps, hazelnut oil and creamy egg white foam
